Ingredients
- 1 block of extra-firm tofu
- 1 red onion, cut into chunks
- 1 red bell pepper, cut into chunks

- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 2 teaspoons dried oregano
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 10-12 bamboo or metal skewers
Tzatziki Sauce
- 1 cup vegan yogurt
- 1/2 cup grated cucumber
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 tablespoon chopped fresh dill
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Drain the tofu and press it with a paper towel to remove any excess water. Cut it into cubes.
- In a small bowl, whisk together the olive oil, lemon juice, garlic, oregano, paprika, cumin, salt, and black pepper.
- Thread the tofu, onion, bell peppers, and zucchini onto skewers, alternating the vegetables and tofu cubes.
- Brush the skewers with the marinade, making sure to coat all sides.
