veggie fried quinoa – Hungry Happens


Such an easy delicious alternative to the oh so tempting takeout: FRIED RICE. Just make sure you do not over cook the quinoa! I could never get tired of this side dish, it has the hearty quinoa to fill you up AND provide you with protein. And the delicious veggies to feel good about. This will become a staple in your home.

Also, you don’t NEED sesame oil to make this, you can sub in any vegetable oil. And any veggies for that matter! And, of course, you can use rice instead of quinoa.

Ingredients:

  • 1.5 cups uncooked quinoa
  • 2 carrots, peeled & shredded
  • 1 (8 oz) package mushrooms
  • 1 zucchini, chopped
  • 1 jalapeno, minced
  • 1 red onion, chopped
  • 4 tbs sesame oil (+ more)
  • sea salt & ground pepper to taste
  • 4 eggs, beaten
  • 3 scallions, chopped
  • 3 tsp soy sauce (or Tamari)

Directions:

Cook quinoa according to instructions on packaging… DO NOT OVER COOK! Set aside.

Working in batches, heat 1 tbs sesame oil (on medium high) at a time and saute the veggies (all except the scallions). I had 3 batches/saute sessions. Set veggies aside.

Heat 1 tbs sesame oil in the large pan, add the eggs and swirl them around to coat the bottom of the pan. Add the quinoa and scallions and toss to cook all together for 3 minutes. Next, add the veggies and soy sauce and combine and heat through all.

Yields 4 servings.
