Lemon Snowball Cookies – Eat With Your Eyes

Ingredients: 1/4 teaspoon Baking soda,1/4 teaspoon Cream of tartar,1 Egg,2 tablespoons all-purpose flour,1 tablespoon Lemon juice,1 1/2 teaspoons Grated lemon rind,1/2 cup Finely chopped pecans,1/2 teaspoon Salt,2 cups Sugar,2 tablespoons unsalted butter, plus more, room temperature, for dishes,1 cup Water
Instructions:

  1. Heat oven to 350 degrees. Grease baking sheets. Cream fist six ingredients together. Sift flour, baking soda, salt and cream of tartar together and add to creamed mixture along with nuts. Make 1-inch balls and place 1-inch apart on baking sheet.
  2. Bake 10-15 minutes until cookies are light brown on bottom. Cool slightly and roll in powdered sugar.
