Cranberry Turkey Meatballs – Eat With Your Eyes

Ingredients: 1 lb. ground turkey,1/4 cup dried cranberries,2 eggs,1/2 cup breadcrumbs,1/4 cup Greek yogurt,1/2 tbsp apple cider vinegar,1/4 cup fresh herbs: I used parsley and thyme,1 tsp salt and pepper
Instructions:

  1. Preheat oven to 400F and line a baking sheet with parchment paper or a silicon baking sheet.
  2. Place all ingredients in a large bowl and mix with your hands until combined.
  3. Shape into balls and place on prepared pan about 1-inch apart.
  4. Bake for 30-35 minutes, until internal temp is 165F.
  5. Remove from the oven and serve!
