Peanut Butter S’mores Bars
S’mores are always a good idea, especially during the summer months. My favorite way to eat a s’mores…graham cracker, toasted marshmallow, and a peanut butter cup! The peanut butter cup is a game changer, trust me! Have you tried it?
Let me introduce you to Peanut Butter S’mores Bars! Oh, yes, I took my favorite s’mores combo and turned it into a fun bar treat you can make in the oven, without a campfire! These easy s’mores bars are a family favorite dessert. The bars are made with a simple graham cracker cookie crust, a layer of marshmallow creme, creamy peanut butter, and then the bars get topped with lots peanut butter cups and another layer of graham cracker cookie dough. Oh, and sprinkle of sea salt, to bring the sweet and salty together. S’mores HEAVEN!
How to Make Peanut Butter S’mores Bars
- Line a 9×13-inch pan with parchment paper and spray with nonstick cooking spray. This will make it easier to take the bars out of the pan after they have cooled.
- You will need 2 cups of crushed graham cracker crumbs. You can make graham cracker crumbs in the food processor or you can place graham crackers in a large plastic bag with a zip top and crush them with a rolling pin. You will need 16 full sheet graham crackers to make 2 cups graham cracker crumbs.
- Whisk together the crushed graham cracker crumbs, flour, baking powder, and salt.
- In the bowl of a stand mixer, beat the butter and brown sugar until light and fluffy, about 2 minutes. Beat in the eggs and vanilla until well combined.
- Add the dry ingredients and mix on low until just combined.
- Divide the dough in half. Press half into the bottom of the prepared pan until the dough is evenly flattened. If the dough is sticky, you can spray your hands with nonstick cooking spray to help or get them slightly damp.
- You will need a 7-ounce jar of marshmallow creme, PLUS 1/2 cup, so buy 2 jars. DON’T USE REGULAR MARSHMALLOWS. They won’t melt and get gooey like marshmallow creme.
- Dollop the marshmallow fluff on top of the cookie dough base and spread into an even layer with a spatula.
- Place the peanut butter in a small microwave safe bowl and heat for 30 seconds. Stir the peanut butter and drizzle over the marshmallow topping. Place the peanut butter cups, in rows, over the marshmallow fluff and peanut butter.
- Gently flatten and press the remaining dough over the top of the peanut butter cups, doing your best to cover most of the peanut butter cups. It will be a thin layer of dough on top and that is ok, do your best to spread it over the entire pan. If there are a few holes, that is ok.
- Bake the bars until golden brown, about 32 to 37 minutes. It is ok if some of the marshmallow puffs up outside of the bars. It will settle as it cools, plus it makes the bars look good! I love the marshmallow peaking through the bars.
- Cool the bars completely. Remove from the pan with the parchment paper. Cut the bars into squares and enjoy!
How to Store Peanut Butter S’mores Bars
The peanut butter s’mores bars will keep covered on the counter for up to four days. You can also freeze these s’mores bars. Cool the bars completely and place in a freezer bag or wrap in plastic wrap and foil. Freeze the bars for up to 2 months. Defrost before serving.
You can half this recipe and use an 8×8-inch pan, but I highly recommend making the full recipe because these bars are SO good!
