- 1 lb. ground beef
- 1 onion, chopped

- 1 zucchini, chopped
- 1 eggplant, chopped
- 1 can diced tomatoes (14 oz.)
- 1 cup beef broth
- 1 tsp. dried oregano
- 1 tsp. dried basil
- 1 tsp. dried thyme
- 1/2 tsp. cinnamon
- 1/4 tsp. allspice
- 1/4 tsp. nutmeg
- Salt and pepper, to taste
- 1/4 cup olive oil
Directions
- Preheat your oven to 375°F (190°C).
- Heat the olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, stirring occasionally.
- Add the onions, garlic, and peppers and cook until they’re tender, stirring occasionally.
- Add the zucchini and eggplant and cook until they’re browned, stirring occasionally.
- Add the diced tomatoes, beef broth, oregano, basil, thyme, cinnamon, allspice, nutmeg, salt, and pepper to the skillet. Stir to combine.
- Simmer the mixture for 10-15 minutes, stirring occasionally, until the liquid has reduced slightly and the flavors have blended.
- Transfer the mixture to a large baking dish and bake in the oven for 25-30 minutes, or until the top is golden brown and crispy.
- Let the dish cool for a few minutes before serving.
