What ingredients are used in this vegan Spanakopita recipe?
Ingredients:
- 1/2 cup chopped onion
- 3 cloves garlic, minced
- 1/2 bunch fresh spinach, chopped
- 1/2 bunch fresh dill, chopped
- 1/2 bunch fresh parsley, chopped
- 1/3 cup chopped walnuts
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/4 tsp nutmeg
- 1/4 cup olive oil
- 1/2 cup water
- 12 sheets phyllo dough
Directions:
- Preheat oven to 375°F (190°C)
- In a large skillet, sauté onion and garlic in olive oil until soft, about 5 minutes.
- Add spinach, dill, parsley, and walnuts and sauté for 3 minutes.
- Season with salt, pepper, and nutmeg and stir well.
- Remove from heat and let cool.
- Brush a baking dish with olive oil.
- Place one sheet of phyllo in the dish and brush with olive oil.
- Repeat with 4 more sheets of phyllo.
- Spread the spinach mixture over the phyllo.
- Place the remaining phyllo sheets on top, brushing each layer with olive oil.
- Bake for 20-25 minutes, until golden brown and crispy.
- Cut into squares and serve hot or cold.
