1 cupuncooked quinoa
2 cupswater
1 canchickpeas, drained and rinsed
1 mediumred bell pepper,⁢ diced
1 mediumyellow bell pepper, diced
1 mediumred​ onion, diced
1 cupcherry tomatoes, halved
1/2 ⁣cupKalamata olives, pitted and sliced
1/4 cupfeta cheese, crumbled
1/4 cupfresh‌ parsley, chopped
1/4 ‍cupfresh‌ lemon juice
1/4 cupextra-virgin olive oil
1/2 tspground cumin
1/2 tspsmoked paprika
1/2 tspcrushed‌ red pepper flakes
to tastesalt and black pepper


  1. Rinse the quinoa well and ‍put it in⁢ a‌ medium saucepan with the water. Bring to a⁢ boil, reduce heat to‍ low, cover, and simmer for 15-20 ‌minutes or until all the water has been absorbed. Fluff with a fork ⁣and let⁤ cool.
  2. In ‍a large bowl, combine the cooked quinoa, chickpeas, bell ⁤peppers, onion, tomatoes, olives, and feta‌ cheese.
  3. In a small bowl, ⁢whisk together the‍ lemon juice, olive​ oil, cumin,⁤ paprika, red pepper flakes, salt, and black pepper.
