- 1/2 cup of quinoa
- 1/2 pound of chicken breast
- 1/2 cup of cherry tomatoes
- 1/2 cucumber
- 1/4 cup of red onion
- 1/4 cup of feta cheese
- 2 tablespoons of olive oil
- 1 tablespoon of red wine vinegar
- 1 tablespoon of lemon juice
- 1 clove of garlic
- 1 teaspoon of dried oregano
- Salt and pepper to taste
Instructions
- Cook quinoa according to package instructions.
- Season chicken with oregano, salt, and pepper. Cook in a pan with 1 tablespoon of olive oil until golden brown and cooked through.
- Cut cherry tomatoes in half, dice cucumber, and finely slice red onion. Set aside in a bowl.
