Best Cream Of Tomato Soup – Eat With Your Eyes


Ingredients: 2 tbsp. coconut oil,1 medium organic carrot, finely chopped,3 tbsp. organic pure tomato paste,1 tbsp. pure maple syrup,2 sprigs of thyme + 1 organic GF bay leaf,1 (13.5 oz.) can organic coconut milk,1 medium organic yellow onion, finely chopped,2 cloves garlic, finely chopped,3 cups vegetable stock,1 tbsp. fresh organic lemon juice,1 (15-oz.) can organic pure crushed tomatoes no additives,1 organic GF bay leaf

  1. In a large pot add coconut oil, onion, garlic and carrot, saut on medium heat until just soft, about 5 minutes
  2. Add tomato paste and cook for about 2 minutes while stirring
  3. Add stock, maple syrup, lemon juice, thyme, bay leaf and tomatoes, simmer for about 20 minutes, stirring occasionally
  4. Remove from heat, remove bay leaf and thyme, and add to food processor or blender, blend until smooth
  5. Return to pot and stir in coconut milk, add sea salt to taste
