Blueberry Sushi with Honey Chili
Editor’s Note: Contrary to popular belief, making homemade sushi doesn’t have to be complicated. If you are searching for sushi recipes for beginners, look no further than this Blueberry Sushi with Honey Chili. The beauty of this easy sushi recipe is that it only requires a few ingredients. Thin strips of cucumber are wrapped around homemade sushi rice that is then topped with blueberries and a surprisingly simple sauce. If you are intimidated by seafood sushi rolls, then this blueberry sushi is an excellent place to start.

Ingredients
- 1 English (hothouse) cucumber
- 1 cup (5 oz./150 g) sushi rice
- 4 tablespoons (1 oz/30 g) blueberries
- 2 fresh small red chili peppers, halved, seeded, and cut into fine julienne
- Honey-chili Sauce
- 1 fresh chili, seeded and finely chopped
- 2 tablespoons honey
Instructions
Using a vegetable peeler, peel off a wide, lengthwise slice of cucumber skin and discard. Place cucumber on a cutting board, cut side up, hold firmly, and with the peeler, peel a paper-thin slice about 1 ½ inches (4 cm) wide and 4 inches (10 cm) long. (The strip will have a narrow green outer edge of skin and white flesh in the center. The skin allows the cucumber to stick to the rice.) Repeat to make 3 more slices.
With wet hands, shape rice into 4 fingers. Wrap a cucumber strip around outside of each rice finger. Top with 1 tablespoon blueberries and 1 chili strip. Place sushi rolls on a plate.
To make honey-chili sauce: Mix chili and honey together in a bowl.
Pour sauce over sushi rolls to serve.
