brownie banana bread loaf – Hungry Happens


Always a banana bread muffin, loaf, cookie or bar on my horizon.  The possibilities are endless when you are obsessed with a fruit and its deliciousness, not to mention, its health benefits.  And the uglier it gets, the sweeter it tastes and the more nutrients it shares with us.  What’s not to adore?

But really, I asked myself, how can we up the ante?  I figured adding brownie layers would do the trick.  I’m fairly certain I was correct here.

Brownie Ingredients:

  • 5 oz. chocolate chips
  • 1/4 cup coconut oil
  • 1/4 cup brown sugar
  • 1 egg
  • 1/4 cup flour

Banana Bread Ingredients:

  • 1 cup flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 medium ripe bananas, mashed
  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 1/3 cup milk of choice
  • 1/2 tsp vanilla extract

Directions:

Preheat oven to 350 F.  Grease or line a 9×5″ loaf pan.

For Brownie Layers:

Melt chocolate chips and coconut oil over low heat.  Remove and leave to cool slightly.  Stir in brown sugar.  Next add the egg and mix to combine.  Fold in the flour and mix to combine.

For the Banana Bread Layers:

In a large bowl, whisk together the flour, baking soda, baking powder, salt.  In a medium bowl, mix the banana, oil, syrup, milk and vanilla.  Pour the wet into the dry, little at a time, until just combined.

Pour half the banana mixture into the pan.  Then half the brownie mixture.  Then again the rest of the banana mixture on top and then the rest of the brownie batter in the center.

Bake for 45-50 minutes or until a toothpick comes out clean.

Notes:

This can easily be a dairy free recipe if you use vegan chocolate chips.  You can also sub in honey for the maple syrup.  In addition, unsalted butter can be subbed in for the coconut oil.
