- 1 lb. boneless, skinless chicken breasts
- 1 cup Greek yogurt
- 2 cloves garlic, minced
- 1 lemon, juiced and zested
- 1 tbsp. dried oregano
- 1 tsp. dried thyme
- 1 tsp. ground coriander
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1/4 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/4 cup chopped kalamata olives
- 1/4 cup chopped cucumber
- 1/4 cup chopped red onion
- 1/4 cup chopped tomato
- Pita bread or rice, for serving
Instructions
- In a large bowl, whisk together the Greek yogurt, garlic, lemon juice and zest, oregano, thyme, coriander, salt, and black pepper.
- Add the chicken breasts to the bowl and toss to coat. Cover and refrigerate for at least 30 minutes or up to 4 hours.
- Preheat a grill or grill pan to medium-high heat. Remove the chicken from the marinade and discard the remaining marinade.
- Grill the chicken for 5-7 minutes per side, or until cooked through and no longer pink in the center.
- Let the chicken rest for 5 minutes, then slice into thin strips or cubes.
- In a small bowl, mix together the feta cheese, parsley, mint, kalamata olives, cucumber, red onion, and tomato.
- Arrange the sliced or cubed chicken on a platter and top with the feta cheese mixture.
- Serve with warm pita bread or rice.
