Ingredients: 4 large eggs,4 large egg whites,1/2 cup low fat milk,2 cups bread , stale and cubed,1/4 cup onion, minced,1/4 cup red bell (capsicum) peppers, minced,1/4 cup yellow bell pepper, minced,1 cup mushroom , sliced,1 cup mushroom , sliced,2 tablespoons basil, chopped,2 tablespoons basil, chopped,2 tablespoons bacon bits, use real bacon bits,1 teaspoon olive oil,1/2 cup cheese, shredde
Instructions:
- Heat non-stick skillet over medium heat.
- Add oil and saute onion and peppers for 5 minutes to soften.
- Add mushrooms and saute another 5 minutes.
- Spray baking dish with cooking spray and add bread cubes. Top with mushroom mixture, basil, and salt and pepper to your taste.
- Sprinkle with bacon bits and cheese.
- Whip eggs and milk together and pour over bread mixture.
- Refrigerate for one hour up to overnight.
- Heat oven to 35
- Bake 20 minutes covered with foil. Uncover and bake another 10 minutes until puffed and lightly browned.
