Ingredients
- 4 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1/2 cup sliced cucumber
- 1/4 cup thinly sliced red onion
- 1/2 cup crumbled feta cheese
- 1/4 cup toasted pine nuts
- 1/4 cup chopped fresh basil
Dressing
- 1/4 cup extra-virgin olive oil
- 2 tablespoons red wine vinegar
- 1 clove garlic, minced
- 1 teaspoon Dijon mustard
- Salt and pepper, to taste
Instructions
- In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, feta cheese, pine nuts, and basil.
- In a small bowl, whisk together the olive oil, red wine vinegar, garlic, Dijon mustard, salt, and pepper.
- Drizzle the dressing over the salad and toss to coat.
- Serve immediately.
