- 2 cups rolled oats
- 1 cup chopped nuts (or seeds if you prefer)
- 1/2 cup honey
- 1/4 cup coconut oil (melted)
- 1 tsp vanilla extract
- 1/2 cup dried fruits (optional)
- Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
- In a large mixing bowl, combine oats, chopped nuts, and dried fruits (if using).
- Add in honey, melted coconut oil, and vanilla extract. Mix well to combine.
- Transfer the mixture to the prepared baking pan, pressing it down firmly and evenly.
- Bake for 20-25 minutes, or until the mixture is golden brown.
- Let it cool completely before cutting it into bars.
