A quick and easy grilled chicken marinated in a Greek style marinade with olive oil, lemon, garlic and oregano!

There is just something magical about the simple Greek/Mediterranean flavour combo with olive oil, lemon, garlic and oregano especially when used in a marinade for chicken, pork, or lamb! This Greek style grilled chicken is as easy to make as marinating it for 30 minutes to overnight and then grilling it! That’s less than 15 minutes of active time! My favourite way to cook this marinated chicken is on the grill which adds a nice smokiness to it and you can also pan-sear it, broil it, or oven roast it so you have lots of options! This Mediterranean grilled chicken is fabulous all by itself and you can use it in pitas, sandwiches, salads, etc.

ingredients
  • 1 pound boneless and skinless chicken breast or thigh
  • 1/4 cup olive oil
  • 1 lemon, juice and zest
  • 2 cloves garlic, minced/grated
  • 1 teaspoon oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
directions
  1. Marinate the chicken in the mixture of the olive oil, lemon juice and zest, garlic, oregano, salt and pepper in the fridge for 30 minutes to overnight.
  2. Grill over medium-high heat until cooked, about 2-4 minutes per side.

Option: Add 1 tablespoon plain yogurt to the marinade.
Option: Cut the chicken into bite sized pieces, skewer and grill!
Option: Instead of grilling on the BBQ, pan-sear over medium-high heat or broil!
