Green Chile & Corn Casserole Side Dish – Eat With Your Eyes

Ingredients: 1 tablespoon Butter,16 ounces Corn,1 1/2 cups extra sharp Cheddar Cheese, shredded,4 ounces can chopped Green Chile,2 tablespoons Seasoned Italian Bread Crumbs,Sea or Kosher Salt & fresh Black Pepper,1/4 cup Milk,1 cup Sour Cream,1 teaspoon Thyme
Instructions:

  1. Preheat oven to 400 degrees. Grease an 8×8 casserole dish.In a medium mixing bowl whisk sour cream, milk, and thyme together until well combined.
  2. Add green chiles with juices, corn, and cheddar. Season well with salt and pepper.
  3. Mix well.
  4. Pour into greased casserole dish.
  5. Sprinkle crumbs evenly over top.
  6. Cut butter into tiny cubes and dot the top with them.
  7. Bake for 20-25 minutes until top is golden brown and casserole is bubbly.
