Ingredients: 1/2 cup Peanut Butter,1/2 cup Butter, softened,1/4 cup Sugar,1/4 cup Brown Sugar,1/4 cup Brown Sugar,1/2 tsp. Baking Soda,1/2 tsp. Baking Powder,1 Egg,1/4 tsp. Vanilla Extract,1/2 cup All Purpose Flour,3/4 cup Whole Wheat Pastry Flour,Optional: Dark Chocolate, melted
Instructions:
- In a large mixing bowl, beat butter and peanut butter with an electric mixer on medium to high speed for 30 seconds.
- Add the granulated sugar, brown sugar, baking soda, and baking powder. Beat until combined, scraping sides of bowl occasionally.
- Beat in the egg and vanilla until combined.
- Beat in as much of the flour as you can with the mixer. Stir in any remaining flour.
- Cover and chill dough about 1 hour or until easy to handle. I did mine over night, but thats not necessary.
- Preheat oven to 375 degrees F. Shape dough into 1-inch balls. Flatten with palm of hand and use a cookie cutter to cut shape. Than roll into additional granulated sugar to coat.
- Place dough 2 inches apart on an ungreased cookie sheet.
- Bake for 7 to 9 minutes or until bottoms are light brown.
- Transfer to a wire rack and let cool.
- Optional, drizzle with chocolate
