Ingredients

  • 1 pound lamb shoulder, cut into cubes
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1/2 cup chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 2 cups cooked brown rice
  • 1 cup Greek yogurt
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1 lemon, cut into wedges

Directions

  1. Preheat the oven to 350°F.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the lamb and cook until browned on all sides, about 8 minutes.
  3. Add the onion and garlic and cook until softened, about 5 minutes.
  4. Add the diced tomatoes, chicken broth, oregano, thyme, paprika, cinnamon, cayenne pepper, salt, and pepper. Stir well and bring to a simmer.
  5. Transfer the mixture to a baking dish and bake for 45 minutes.
  6. In a small bowl, mix the Greek yogurt, parsley, mint, and a squeeze of lemon juice.
  7. Serve the lamb stew over brown rice, topped with the yogurt sauce and lemon wedges.
