Greek Feast

Ingredients:

  • 1 lb. of ground lamb
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 3 cloves of garlic, minced
  • 1 can of diced tomatoes
  • 1 cup of feta cheese, crumbled
  • 1 tsp of dried oregano
  • 1 tsp of dried thyme
  • 1/4 tsp of red pepper flakes
  • Olive oil
  • Salt and pepper

Instructions:

  1. Preheat your oven to 375°F.
  2. Heat some olive oil in a large skillet over medium-high heat. Add the onion and both bell peppers and cook until the vegetables are soft, about 5-7 minutes.
  3. Add the garlic and cook for 1 more minute.
  4. Add the ground lamb to the skillet and cook until browned, breaking it up into small pieces with a wooden spoon.
  5. Drain any excess fat from the skillet and add the can of diced tomatoes (with its juices), oregano, thyme, and red pepper flakes. Season with salt and pepper to taste.
  6. Transfer the mixture to a baking dish and sprinkle the feta cheese on top.
  7. Bake for 25-30 minutes, until the cheese is golden brown and bubbly.
  8. Let the dish cool for a few minutes and serve with some pita bread, hummus, and tzatziki sauce. Enjoy!
