Ingredients: 4 vegan tortillas – 10”,1/4 cup vegetarian refried beans,1 dash cumin,1/4 cup salsa,2 teaspoons fresh cilantro – diced,8 Rice Vegan Pepper Jack or Cheddar flavor slices,Various sliced vegetables (bell peppers, mushrooms, onions, etc.),Various sliced vegetables (bell peppers, mushrooms, onions, etc.)
Instructions:
- Heat non-stick skillet.
- Mix vegetarian refried beans, cumin and fresh cilantro.
- Spread bean mixture over half of each tortilla.
- Place the Rice Vegan slices over the beans, then cover with salsa.
- Add fresh vegetables such as sliced bell peppers, mushrooms, asparagus and squash as desired.
- Fold bottom half on top.
- Heat in non-stick skillet on both sides until golden brown and slices are melted.
- Cut each tortilla into 4 wedges and serve each person 2 wedges.
