Sweet and tangy lemon tarts in light and flakey all butter pastry crust!

  • 1 pie crust pastry, chilled
  • 1/3 cup lemon juice
  • zest of 1 lemon
  • 2/3 cup granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 1/4 cup unsalted butter, melted and cooled
  • pinch of salt
  1. Roll the pastry out to 1/8 inch thick and cut out 12 2-4 inch circles, pressing them into the holes in a muffin baking pan.
  2. Optionally, chill the muffin pan in the fridge for at least 30 minutes.
  3. Meanwhile, mix the lemon juice, zest, sugar, egg, yolk, butter, and salt and pour the mixture into the tarts.
  4. Bake in a preheated 350F/180C oven and bake until set, about 18-20 minutes.

Option: Dust with powdered/confectioners sugar!
