I’ll be the first to admit, when I was a kid, I didn’t *get* sweet potatoes. Now that I appreciate them for their wonderful texture and rich flavor, though, I can’t imagine a Thanksgiving (or Friendsgiving!) meal without them.

Simple ingredients and easy instructions make this dish an absolute must! And not just for how incredibly delicious they are. The aesthetic appeal it brings to your table is hard to top. How cute are these? Beautiful burnished orange sweet potatoes and velvety-soft fresh sage leaves–they look like perfect little pumpkins! And they taste like heaven.

How to Make Maple Roasted Sweet Potatoes

First, preheat the oven to 425°F and coat a rimmed baking sheet with nonstick cooking spray. Then scrub the sweet potatoes and dry well. Cut into ½ inch thick slices. Place the sweet potatoes in a single layer on the prepared baking sheet.

In a small bowl, whisk together the melted butter, salt, pumpkin pie spice and maple syrup. Brush half of the maple-butter mixture over the sweet potatoes.

Bake for 20 minutes. Flip and brush with the remaining maple butter mixture. Bake for another 20 minutes, until the potatoes are tender and caramelized.

Finally, to serve, stick a small leaf of fresh sage into the top of each sweet potato to look like a pumpkin.

  • 4 Tablespoons unsalted butter, melted
  • ½ teaspoon kosher salt
  • ½ teaspoon pumpkin pie spice
  • ¼ cup maple syrup
  • 16 fresh sage leaves, for garnishing
