Light and tasty pollo asado burrito bowls!
Burritos are always on my list of top foods and in the summer it’s nice to change them up by serving all of the fillings in a bowl as a salad! This is a deconstructed burrito where the tortilla wrapper is replace with a bed of lettuce that’s topped with all of the burrito fillings. This burrito bowl uses grilled pollo asado chicken for the main ingredients and it’s fill the bowl out with cooked rice, beans, corn, pico de gallo (or salsa of choice), and some cheese. You can easily change this up and use your favourite meat and burrito fillings! I generally do not add a dressing, allowing the meat and pico de gallo be the stars of the show, but you could easily add a salad dressing such as: Avocado Dressing, or, Avocado Salsa Verde Dressing, Tomatillo Ranch Dressing, or your favourite dressing.

ingredients
- 6 cups lettuce, sliced
- 1 cup cooked rice
- 1 cup black beans, rinsed and drained,
- 1 cup corn
- 1 cup pico de gallo (or salsa)
- 1 pound pollo asado chicken, chopped, warn
- 1/4 cup queso fresco (or feta), crumbled
directions
- Assemble the burrito bowls and enjoy!
Option: Use your favourite burrito or taco fillings!
