My newest obsession? Prosecco peach shortcakes. It has to be said!
If these aren’t just the cutest summer dessert you’ve ever seen, well… then I need to make you more prosecco poached peach treats. Seriously.
Also, because I love alliteration.
One of our local ice cream places serves brioche ice cream sandwiches. They’ve never really appealed to me because I need TEXTURE. I need some sort of crunch like a cone – or I just want ice cream in a dish without the added squish of a bun.
Until! I made my own brioche buns, covered them in a shower of flaked sea salt and shoved prosecco poached peaches inside with vanilla bean ice cream.
If that isn’t heaven, what is?!
The brioche buns are incredible. Obviously, you will most likely get more use of them in a savory recipe nature. We’ve now used these for burgers and sandwiches and they are dreamy. Homemade bread of any kind if where it’s at.
But brioche bread? It’s so rich and fluffy.
p.s. I do give you some tips at the end of the recipe for the brioche. For example… creating the brioche ice cream sandwich with these buns too. YES.
The peaches alone are insane.
Insaaaaane, I tell you.
In other words, it will be impossible to stay away.
They have so much flavor. The prosecco, which turns into syrup, is delicious on EVERYTHING. As a result, it’s syrupy and sweet but retains the prosecco flavor AND the peach flavor. I mean, I can’t stop myself from taking spoonfuls of it every time I’ve made it. Don’t discard any of it! Keep the prosecco liquid, the peaches, everything! This stays great in the fridge for a few days and it’s incredible in cocktails, on ice cream alone, or even by itself in a little bowl.
YES. By itself. I freaking love it!
You will find a reason to use it. I promise.
Now, I can’t say much about the ice cream since this is a store-bought vanilla. However, the combo of the salted, soft brioche, the creamy ice cream and the syrupy boozy peaches?
OH MY GOSH.
Just go run and make the peaches to serve over ice cream right now. Or heck, even yogurt. Let’s make this a breakfast thing too. Because it’s fabulous.
Why aren’t we eating this every weekend? It is now in the summer rotation forever and ever and ever.
