Roasted Veggie BBQ Sauce – Eat With Your Eyes

Ingredients: 1 roasted red pepper,1 roasted onion,1 bulb roasted garlic,14 oz can organic diced tomatoes, with juice,3 tablespoons apple cider vinegar,1 1/2 ounces blackstrap molasses,2 teaspoons smoked paprika,1/8 teaspoon cayenne pepper,1 teaspoon chili powder,Water as needed
Instructions:

  1. Put tomatoes with juice in a medium sauce pan and bring to a simmer over low heat.
  2. Add spices and continue to simmer on low for about 3-5 minutes to let the spices infuse. (The quantities given are an estimation, use a little at a time and adjust to your taste.)
  3. Allow to cool slightly and transfer to a blender along with red pepper and garlic and puree until smooth.
  4. Add remaining ingredients, including a little water if the mixture is thick, and blend again until well combined. Taste and adjust seasonings if needed.
