Rodolfo Guzmán Pops up in Madrid



Rodolfo Guzmán, head chef and owner of Boragó, will be moving his restaurant from Vitacura, near Santiago in Chile, to Madrid, Spain, from 14 November, for the sixth edition of the pop-up format, In Residence.

The Chilean chef’s relocation marks the return of the annual event, after a three-year covid-induced hiatus, where international and national chefs come to cook in Madrid for a limited period, armed with both their teams and equipment.

While the menu is still under wraps, Guzmán is a dedicated pioneer of locally sourced and foraged ingredients from small producers in his native Chile, and his philosophy is sure to translate onto the plate in the Spanish capital.
