This week I am in full Super Bowl prep mode. I’m not hosting a huge party or anything crazy like that…I’m just seriously into Super Bowl snacks! And pizza is a major no-brainer when it comes to Game Day grub. So I decided today to roll up the average slice, add in some Johnsonville sausage and bake it in a skillet. Crazy fun and totally delicious.

Like I said, I added in some Johnsonville Sausage to make this extra delicious. I love a sausage pie and it just made complete sense to use it in these Pizza Rolls. It’s super convenient and browns up in just minutes. Plus, it adds tons of flavor with minimal prep.

The recipe is super easy. Just brown your sausage first. Let it cool for a few minutes after you cook it. I like to do this because if you add warm sausage onto the pizza dough, the dough tends to be a little harder to roll up, ripping more easily. If it’s closer to room temperature it won’t heat the dough as your rolling it, and just be generally easier to handle.

Gather your additional toppings. I use pizza sauce, some crushed red pepper, mozzarella cheese, sliced black olives, and fresh basil. You could get creative and use different types of cheeses, or spices too!

Next grab a can of pizza dough. I find this is the easiest method for this recipe, because the dough is already in a rectangular shape. You can certainly use homemade dough, or a ball of pizza dough, just roll it out into a rectangle.

Top it with the sauce, leaving about an inch at the edge so it doesn’t squeeze out when rolling it up.

Then add your cooled sausage.

Next cheese…

And then the olives and basil…

Roll the pizza “jelly roll” style using the long edge and then slice it into 8 pieces. It will get a little messy at this stage, but trust me, don’t worry! Do your best and place each piece into an oiled cast iron skillet.

Bake them up for 25-30 minutes…

Skillet Pizza Rolls

Serves: 8 rolls

Ingredients

  • 1 pound Johnsonville Italian Sausage
  • 2 tablespoons olive oil
  • 1 (14 ounce) pizza dough
  • 1 cup pizza sauce
  • ½ – 1 teaspoon crushed red pepper
  • 2 cups mozzarella
  • ¼ cup sliced black olives
  • 2 tablespoons fresh chopped basil

Instructions

  1. In a medium skillet over medium- high heat brown the sausage, break up large clumps with a wooden spoon as you cook. When sausage is fully cooked, remove from heat and set aside to cool for 10-15 minutes.
  2. Preheat oven to 400°F. Drizzle olive oil into a 10- inch cast iron skillet, swirl the pan to roughly coat and set aside.
  3. On a lightly floured surface, or silicone mat, roll out your pizza dough into a rectangular shape, roughly 10×16- inches. Spread the pizza sauce out, leaving about an inch at the end. Sprinkle the red pepper onto the sauce, top with as much sausage as you would like, the cheese and then the black olives and basil.
  4. Starting with the long side of the dough, roll up the pizza into a log. Using a knife, carefully slice the roll into 8, equally sized pieces.
  5. Place the individual rolls into the oiled skillet and bake for 25-30 minutes, or until golden brown.
  6. Serve warm.
