It’s almost summer. Almost. Like we are THIS close…so close I can smell the sunscreen.
The end of the school year gives me so many feels. I am super, mega happy that school is over. Like possibly even more happy than when I was an actual student. No one ever tells you that being a parent to school age children is possibly more stressful (definitely is) than being in school yourself. WHY?
I am sure we were under the same pressures when we were kids, but it just seems BIGGER when you are a parent. Plus, we are now in the age of the “campus portal” where every last grade entered for m kiddo sends a notification to my phone. Dude, I would have been SCREWED if that was a thing back in the day. My parents never really knew my grade situation until we got a report card sent home every 6 weeks. Praise be.
And while the end of the school year makes me happy, I always think about the fact that another school year has ended, and my kids are getting older. Which, of course, we all know is the way time works, but sure doesn’t make it easier.
So while I go drown my sorrows in a pint of ice cream, I’m gonna share another skillet recipe with you. I’m no stranger to skillet dishes…they’re kind of my favorite. And forgive the lack of method creativity, because also, by the end of the school year, I’m about done making dinner. Luckily this is done in under 20 minutes, no joke.
I use skinless, boneless chicken thighs in this recipe, because they are my favorite in skillet recipes. They brown up beautifully, stay moist, and pack a flavor punch. When you’re using such a quick method to cook, you want to try and use a lot of flavor-rich ingredients.
Just season up the thighs. You can use as much, or as little cayenne pepper as you like!
Then just brown the thighs in the skillet, turn the heat down a bit and cook them until they’re cooked through. Squeeze some lime on time for a little citrus flavor and enjoy!

Spicy Skillet Lime Chicken is a super easy, flavor packed skillet dish! Perfect to serve with Spanish Rice or even cauliflower rice for a low carb option!
Ingredients
- 1 teaspoon kosher salt
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon fresh ground black pepper
- 1 teaspoon smoked paprika
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 2 pounds boneless, skinless chicken thighs
- 2 tablespoons butter
- 1 tablespoon olive oil
- 3 – 4 cloves garlic, minced
- juice of 3 limes
- optional – cilantro to garnish
Instructions
- Mix the salt, cayenne pepper, black pepper, paprika, onion powder, and thyme together.
- Sprinkle both sides of the chicken thighs with the spice mixture.
- Heat large skillet over medium-high heat. Melt the butter and the olive oil together. Place the chicken in one layer in the hot skillet. Cook for 6 minutes on one side, and then flip. Turn the heat down to medium and cook for an additional 5 minutes, or until the chicken is cooked through.
- Once chicken is done, turn the heat down to medium-low and add the garlic into the skillet. Drizzle the lime juice on top of the chicken, and flip the chicken again, coating in the sauce.
- Serve immediately and garnish with cilantro, if desired.
Notes
You can adjust the amount of spiciness in this dish by adding more or less cayenne pepper.
