I wanted to share a delicious healthy baked oatmeal recipe with you that I’ve been making various versions for YEARS I’m a little ashamed of myself for not sharing it until now, but here it is in all its glory: STRAWBERRY BANANA BAKED OATMEAL WITH CHOCOLATE CHIPS.
Just imagine a combination of chocolate covered strawberries and creamy sweet bananas together in oatmeal. SIGN ME UP!
Ingredients in strawberry banana oatmeal
There’s nothing better than warm oatmeal in the morning and this strawberry banana oatmeal is perfectly sweet thanks to extra ripe bananas, juicy strawberries and of course, a few mini chocolate chips sprinkled in. Here’s what you’ll need for the recipe:
- Banana: this gives the healthy baked oatmeal the perfect amount of moisture and natural sweetness. Make sure to use ripe bananas!
- Eggs: for a boost of protein in this baked oatmeal and to help it stay together. I haven’t tried using flax eggs instead, but let me know in the comments if you do.
- Almond milk: I love unsweetened vanilla almond milk in this recipe for a little extra flavor but feel free to use any milk you have on-hand.
- Coconut oil: you can use coconut oil, butter, ghee or vegan butter.
- Vanilla: for additional flavor.
- Rolled oats: feel free to use gluten free rolled oats but I would not recommend quick cooking oats or steel cut.
- Baking powder: to help this bake up properly and rise a bit.
- Cinnamon: I love adding a bit of cinnamon for a cozy flavor.
- Salt: this will bring all of the flavors out!
- Strawberries: you’ll love the juicy burst of strawberries in every bite. I think raspberries would also be incredlbe.
- Mini chocolate chips: feel free to use mini, regular, or a vegan & dairy free chocolate chip.
To finish it all off, I suggest serving this with a drizzle of peanut butter or almond butter on top, plus a sprinkle of sea salt.
How to make healthy baked oatmeal
This strawberry banana baked oatmeal recipe is super easy to make. You’ll just need a mixing bowl and a 9×9 inch pan!
- Preheat your oven to 350 degrees F. Spray a 9×9 pan with nonstick cooking spray.
- In a large bowl mix together the mashed banana, eggs, almond milk, coconut oil and vanilla until mostly smooth.
- Next add in your rolled oats, baking powder, cinnamon and salt until well combined. Finally gently fold in strawberries and chocolate chips.
- Pour the mixture into your prepared pan and bake for 25-35 minutes until edges start to become slightly golden brown. Serve warm with a drizzle of almond butter or peanut butter.
How to store, freeze & reheat baked oatmeal
To store this strawberry banana chocolate chip baked oatmeal in the refrigerator:
Be sure the baked oatmeal has completely cooled, and then cover your 9×9 inch pan with tinfoil before transferring it to the refrigerator. It will stay good covered in the refrigerator for 3-4 days, and you can reheat individual slices in the microwave for 30-60 seconds. I like to individually store slices in airtight containers for quick, on-the-go breakfasts.
To freeze & reheat this healthy baked oatmeal:
Once the baked oatmeal has completely cooled, cut it into 6 squares and wrap each square in plastic wrap and tinfoil. When you’re ready to eat it, place the unwrapped frozen square of baked oatmeal on a microwave safe dish and microwave it at 30 second intervals for 1-2 minutes. If you’d like to freeze the entire baked oatmeal for later, simply reheat it in the oven for 20-25 minutes at 350 degrees F while it’s covered with tinfoil.
