Ingredients
- ½ pound carrots, cut into 1-inch pieces
- ½ pound fresh green beans, washed, ends trimmed, and each bean cut in half
- 4 slices thick-cut bacon, diced
- 1 small yellow onion, finely diced
- 1 granny smith apple, core removed, peel on, and cut into 1/4-inch thick slices
- 2 tablespoons hot sauce
- 1 tablespoon light or dark brown sugar
- ½ teaspoon salt
- Fresh ground black pepper, to taste
Instructions
Bring a pot of salted water to a boil.
Add the cut carrots and green beans to the boiling water and cook for 4 to 5 minutes, or until the veggies are just tender.
Drain.
In the meantime, set a cast-iron skillet over medium-high heat and heat it up until hot.
Add the diced bacon to the skillet and cook for 4 to 5 minutes, or until just starting to crisp up.
Stir in the diced onions and cook for 3 minutes, or until softened.
Stir in the apple slices, hot sauce, and brown sugar; cover and cook for 4 minutes.
Add the carrots and green beans to the skillet; stir and cover, and continue to cook for 2 more minutes, or until heated through and tender.
Season with salt and pepper; taste for salt and adjust accordingly.
Remove from heat.
