Actually, I’m not into breaking the rules at all. I’m a typical first born child, goody two shoes, always-follow-the-rules-ALWAYS boring kind of person. So this feels good.

Plus, we need to get prepared for winter. Prepared for hibernation, if you will. We must make sure that the pomegranate arils are plentiful and that our avocados are ripe enough for toast. And that we have more brussels and bacon than anyone should be allowed.

This sounds like it’s going to be a delicious long winters’ nap.

My answer: very.

As in, six-slices-of-avocado-toast-for-all of-my-friends very.

First up!

Oranges, tangerines – whatever your favorite orange citrus is. Mine is cara cara! Top it with pomegranate arils and then some goat cheese crumbles. Salt and pepper and you have the BEST balance of sweet and savory.

I almost always lean way more towards savory with my avocado toast and was pleasantly surprised at how much I loved this. The oranges and pom seeds are just so… refreshing. And the toast is so crunchy!

But next? This next one will probably become a new staple for me. Weekly. Maybe twice a week. Maybe three times! All depends on my leftover brussels situation. And leftover bacon situation. Ha. HAHAHA.

Crisp up some bacon, toss in some shredded sprouts, cook until the bacon is crunchy and the sprouts taste delicious. Top the avocado toast with said mixture and maaaaaybe just a little parm shaving.

Die and go to heaven.

Winter Avocado Toast, Two Ways

Ingredients:

  • 4 slices bacon, chopped
  • 1/2 cup brussels sprouts, stems removed and shredded
  • 1 ounce parmesan cheese, shaved
  • 2 oranges, segmented and sliced
  • 1/3 cup pomegranate arils
  • 2 ounces goat cheese, crumbled
  • 3 avocados, thinly sliced
  • 6 slices bread, toasted
  • salt and pepper

Directions:

Heat a skillet over medium heat and add the bacon. Cook until the fat begins to render, stirring occasionally. Add in the brussels. Toss and stir, cooking until the bacon is crispy.

Thinly slice the avocado and cover the toast with the slices. Sprinkle on salt and pepper. You can also mash it like I do in the video above! Top some of the slices with the bacon and brussels mixture. Add a few parm shavings on top.

Top the other slices with some orange segments and a sprinkle of pomegranate arils. Goat cheese sprinkles on top.
