What Do I Need to Make a Giant Easter Egg Fruit Pizza?
- Store-bought refrigerated sugar cookie dough (or homemade sugar cookie dough)
- Cream cheese
- Powdered sugar
- Vanilla extract
- Fresh Fruits:
- Honey
- 16×12-inch baking sheet
- Parchment paper
Make it Ahead of Time!
You can make and bake the cookie dough up to 2 days in advance. For the best enjoyment, I recommend icing and adding fruit the day you plan to serve it. Keep it prepped in the fridge for a few hours before serving.
How to Make a Giant Easter Egg Fruit Pizza
- Preheat the oven to 350°F. Line a 16×12-inch baking sheet with parchment paper.
- Place the cookie dough on the prepared baking sheet and form it into the shape of an egg that is about 1/4 inch thick, 15 inches long and 11 inches wide.
- Bake until golden brown around the edges and set in the middle, about 18 minutes, rotating the pan halfway through the baking time.
- Remove and let cool completely.
- Make the icing. In the bowl of an electric mixer fitted with the whisk attachment, beat the cream cheese and powdered sugar until smooth. Add the vanilla.
- Beat again until well incorporated.
- Spread the icing over the cooled egg-shape cookie.
- Decorate the cookie with fresh fruits to look like an Easter egg.
- Brush the honey on the fruit, if desired.
How to Store Easter Egg Fruit Pizza
Leftovers can be kept in a sealed container in the fridge for up to 2 days. The cookie will get a little soggy and the fruit will sweat, especially as its come to room temperature. So it’s best to enjoy any leftovers while still chilled.
