Ingredients:
- 60 vine leaves
- 2 cups long grain rice
- 1 large onion, finely chopped
- 2 cloves of garlic, minced
- 1 cup olive oil
- 1/2 cup fresh dill, chopped
- 1/2 cup fresh mint, chopped
- 1 lemon, juiced
- Salt and pepper to taste
Steps:
- Rinse the vine leaves well, blanch them in boiling water for 2-3 minutes, and set aside to drain.
- In a large pan, sauté the onion and garlic in half the olive oil until translucent.
- Add the rice to the pan and continue to cook for a few minutes. Add the dill, mint, lemon juice, remaining olive oil, and season with salt and pepper. Stir well.
- Take a vine leaf, place a spoonful of the rice mixture in the center, fold in the sides and roll up to encase the filling. Repeat this process with the remaining leaves and rice mixture.
- Place the dolmades seam side down in a large pan, cover with water, place a plate on top to weigh them down and cook for about 50 minutes until the rice is thoroughly cooked.
- Allow to cool, then remove dolmades from the water using a slotted spoon. Serve with a squeeze of fresh lemon juice.
