The wait is nearly over. The Bocuse d’Or regional final for Europe will take place on 23 and 24 March in Budapest, Hungary, and you can watch all the live action here on Fine Dining Lovers.
The humble potato, an ingredient at the heart of Hungarian culinary tradition, will take centre stage during the contest, with teams challenged to create a vegetarian dish with it. Three varieties must be used in the dish – Magyarországon készült (‘made in Hungary’): Coronada, a high-quality product with a low-carb content; Anuschka, a product usually eaten in salads; and Madison, generally used for chips.
Already announced to participants is the main theme of the competition – roe deer with foie-gras. Three garnishes will also have to be served on the side that must include important local ingredients, sour cream and cottage cheese.
Following the recent withdrawal of both the Ukrainian and Russian teams, the running order of the countries is as follows:
Day one (23 March 2022)
Poland, Estonia, Ukraine, Denmark, France, Slovakia, Switzerland, Iceland, Belgium.
Day two (24 March 2022)
Finland, Spain, Hungary, The Netherlands, UK, Latvia, Norway, Turkey, Sweden.
