The lazy days of summer are upon us and we’re on a mission to make it as laid-back as possible. We’ve set aside the busy schedule that we live by during the school year for the freedom to do what we feel like doing whenever we want to do it. One thing we’re sure not to forgo though is our Saturday morning stroll to the neighborhood farmer’s market. It’s been scorching hot the past few weeks, but so worth it for all the fresh, local produce we stock up on for the week. Our favorites right now are peaches, watermelon and all the tomatoes!

Almost every Saturday, we pick out three perfect heirloom tomatoes to pair with burrata and toasted bread for an afternoon snack by the pool or as an appetizer before a grilled supper. It’s one of summer’s greatest pleasures for us.

I’m pretty picky about my tomatoes when it comes to texture and taste and heirloom tomatoes just never fail me. I love their smokey, sweet flavor and how each one is surprisingly different yet always sublime.

It’s unbelievable how simple and scrumptious this dish is. We’ve probably had it a dozen times in the last month and we still “ooh!” and “aah!” and “mmmm!” over it every time. So dang delicious!

Thick slices of heirloom tomatoes are sprinkled with fresh cracked pepper and sea salt then drizzled with quality olive oil and balsamic glaze and finished off with chopped fresh basil. A big ball of burrata on the same plate and plenty of toasted bread slices nearby is all there is to it.

If you’ve never had burrata, this is the way to do it! Burrata is fresh mozzarella filled with cream and curds and once you go burrata, you’ll have a hard time going back to plain mozzarella. It’s amazing!

The way the fresh heirloom tomatoes over the creamy burrata over the crunchy bread all comes together is something special!

Burrata and Heirloom Tomatoes with Toasted Bread

Serves: 6-8

Ingredients

  • 3 large heirloom tomatoes, sliced thick
  • 8 ounces burrata
  • sea salt
  • freshly ground black pepper
  • olive oil
  • balsamic glaze
  • 2 tablespoons chopped fresh basil
  • 1 loaf rustic bread, cut into thick slices

Instructions

  1. Preheat oven to 400°F. Place bread slices in a single layer on a large baking sheet and toast for 10-12 minutes, flipping bread halfway through, until both sides are golden.
  2. Meanwhile, arrange sliced tomatoes around burrata on a large serving plate. Sprinkle generously with sea salt and black pepper. Drizzle with olive oil and balsamic glaze. Sprinkle with chopped fresh basil.
  3. Serve toasted bread alongside plate of tomatoes and burrata. Spread burrata on a slice of bread, arrange a few tomato slices on top of the burrata and enjoy!
