Ingredients

  • 4 boneless, skinless chicken breasts

  • 1 teaspoon dried basil

Directions

  • Preheat the oven to 375°F.
  • Season the chicken breasts with oregano, basil, salt, and pepper.
  • Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-6 minutes per side, until browned.
  • Transfer the chicken to a baking dish.
  • Add the sliced bell peppers, onion, and garlic to the same skillet and cook for 3-4 minutes, until slightly softened.
  • Add the chicken broth and white wine to the skillet and cook for 1-2 minutes, until slightly reduced.
  • Add the olives and feta cheese to the skillet and stir to combine.
  • Pour the vegetable mixture over the chicken in the baking dish.
  • Bake for 25-30 minutes, until the chicken is cooked through.
  • Serve with tzatziki sauce on top.

Tzatziki Sauce Recipe

  • 1 cup plain Greek yogurt
  • 1/2 cucumber, seeded and grated
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh dill
  • Salt and pepper, to taste
  • In a medium bowl, mix together the Greek yogurt, grated cucumber, garlic, lemon juice, and dill.
  • Season with salt and pepper, to taste.
  • Refrigerate for at least 30 minutes before serving.
