One cannot go wrong with healthified rice crispy treats. Especially if you are a peanut butter + chocolate lover like moi. Found these on facebook and could not wait to share. Recipe adapted from goodful.com
Ingredients:
- 3 cups brown rice cereal
- 1 cup smooth peanut butter
- 1/2 cup maple syrup*
- 1 tsp vanilla extract
- 1/2 cup dairy free chocolate chips
- 2 tsp coconut oil
Directions:
Line an 8×8″ brownie pan with parchment paper.
Place the cereal in a large, deep bowl.
In a medium sauce pan, on low heat, combine the peanut butter, maple syrup and vanilla. Stir constantly until smooth. Transfer immediately to the bowl of cereal and combine. Transfer this mixture to the brownie pan and spread out evenly.
Chill in refrigerator until solid. In a small pot, melt the coconut oil and then add the chocolate chips. Stir constantly on low heat, until smooth.
Remove from rice cereal mixture from pan and slice into bars. Immediately dip bottoms of each bar into the chocolate and place each on a piece of wax paper. Drizzle the remaining chocolate on top. Place back in fridge for 15 minutes to set.
Store leftovers in an airtight container in the refrigerator. Yields 10 bars.
Notes:
- You can use honey instead of the maple syrup but then no longer vegan.
