Irish Colcannon Potatoes Recipe

You can never have enough potato side dish recipes, and this creamy colcannon is a must!

I made this recipe after I was inspired by the new film, Wild Mountain Thyme (Now in theaters and at home On Demand)! The film is set in Ireland and got me thinking back to our family trip in 2008. It was one of the most beautiful places I’ve ever been, and I just loved the food!!

Mashed potatoes are mixed with greens, bacon and cream for an indulgent and super tasty dish.

Make up a batch of these colcannon potatoes ASAP, you won’t regret it!

Just seeing the trailer for Wild Mountain Thyme took me back to when my family visited Ireland after I graduated college. Such a beautiful place with wonderful people and amazing food.

It got my mind going about how to incorporate a classic Irish dish into our holiday menu this year, leading me to make this Colcannon Potatoes recipe!

How to make colcannon potatoes

  • Boil the potatoes and drain.
  • Add the potatoes back to the pot with butter.
  • Add the kale, season and cook.
  • Stir in the green onion.
  • Add the cream and mash the potatoes.
  • Season, stir in the bacon and drizzle with butter.

Can you make them ahead of time?

Colcannon potatoes are a great make ahead side dish. You can make the whole dish, let it cool to room temperature and then keep it covered in the fridge for up to 3 days.

To serve, gently reheat on the stovetop, stirring occassionlly until heated through.

If you have leftovers, they are great to use in dishes like Cottage Pie.

What are the best potatoes to use?

Mashed potatoes are best made with starchy potatoes. I like to use Russets and Yukon Gold do a great job too. Avoid starchy potatoes like fingerlings and red.

These colcannon potatoes are super versatile and are great to serve with so many meals. They make a great addition to any holiday table, but they are so easy to make, you can easily serve them as part of a weeknight meal. Try them with:

  • Boil the potatoes in salted water so you add flavor to the dish right from the beginning.
  • Don’t over work the potatoes, this can cause them to become gluey in texture.
  • Season this dish to your taste.
