Curried Chicken Salad
My mom loved a good curried chicken salad. We used to go to this little deli off of the highway for lunch, and every time we went, my mom would order the curried chicken salad. I remember thinking that it didn’t look all that appetizing, but years later, I’m a curry nut. I wish my mom was still around to enjoy this delicious salad with me. I make mine just as I remember hers, with cashews and golden raisins.
You might think curry is a bit grown up, but the sweetness of the raisins ensures that kids of all ages enjoy this salad. My boys and I enjoy it best on buttery crackers—sooo good!
Yields4 servings
Ingredients
- 2 cups (250 g) diced rotisserie chicken
- 1/2
cup (118 ml) Greek yogurt - 1 teaspoon tsp curry powder
- 2 green onions, thinly sliced
- 1/2
cup (76 g) golden raisins - 1/2
cup (56 g) whole roasted cashews - Salt and pepper, to taste
Directions
Combine all of the ingredients in a medium bowl and mix well to combine.
Spread onto bread or serve with crackers, or eat with a spoon. You just can’t go wrong here.
