flourless baked chocolate munchkins – Hungry Happens


I made these around Christmas /New Years in a Snickerdoodle version and they were unreal. So thus I had to spin them into these chocolate bites. They definitely remind me of the munchkins but quite obviously so much better. The center is moist and chewy because of the cream of tartar. Just perfect.

Ingredients:

  • 1 3/4 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 cup cacao powder
  • 1/4 cup coconut sugar (+more later)
  • 1.5 tsp espresso powder (optional)
  • 1/2 tsp baking soda
  • 1/4 tsp cream of tartar
  • 1/4 tsp salt
  • 1 egg, beaten
  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract

Directions:

In a large bowl, whisk together the first 8 ingredients. In another large bowl, mix the last 4 wet ingredients until just combined. Add the dry mixture to the wet mixture (a little at a time) and mix until all is combined. Serane wrap the dough and refrigerate for at least 2 hours.

Preheat oven to 350 F. Line a cookie sheet with parchment paper. Throw some sugar in a small bowl. Form the dough into small balls and then roll in the sugar to coat exterior of each. Bake for 8 -10 minutes (do not over bake!). Store em in an airtight container.

Yields 18 munchkins.
