- 4 cups mixed greens
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/2 cucumber, sliced
- 1/2 avocado, diced
- 1/4 cup feta cheese, crumbled
- 1/4 cup toasted almonds, chopped
- 1/4 cup olive oil
- 2 tbsp balsamic vinegar
- 1 tsp honey
- 1/2 tsp Dijon mustard
- Salt and pepper to taste
1. In a large bowl, combine mixed greens, cherry tomatoes, red onion, cucumber, avocado, feta cheese, and toasted almonds.
2. In a small bowl, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper.
3. Pour the dressing over the salad; toss until evenly coated.
