Lemon Herb Quinoa

Ingredients

  • 4 salmon fillets (6-ounce each)
  • 4 tablespoons unsalted butter, melted
  • 4 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1 lemon, zested and juiced
  • Salt and black pepper, to taste
  • 1 cup quinoa, rinsed and drained
  • 2 cups vegetable broth
  • 1/2 cup fresh parsley, chopped
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup fresh lemon juice
  • 1/4 cup extra-virgin olive oil
  • Salt and black pepper, to taste

Directions

  1. Preheat the oven to 375°F (190°C).
  2. In a small bowl, mix together the melted butter, minced garlic, chopped parsley, lemon zest, and lemon juice. Season with salt and black pepper, to taste.
  3. Place a cast iron skillet over medium-high heat and brush it with some olive oil. Season the salmon fillets with salt and black pepper, to taste, and place them skin-side down in the skillet. Cook for about 3 minutes, until the skin is crispy.
  4. Spoon the garlic butter mixture over the salmon fillets, making sure they are fully coated. Transfer the skillet to the preheated oven and bake for 10-12 minutes, until the salmon is cooked through.
  5. Meanwhile, in a medium saucepan, combine the quinoa and vegetable broth. Bring to a boil, then reduce the heat to low and simmer for 15-20 minutes, until the quinoa is tender and the liquid is absorbed.
  6. Remove the quinoa from the heat and stir in the chopped parsley, chopped cilantro, lemon juice, and olive oil. Season with salt and black pepper, to taste.
  7. Serve the garlic butter salmon hot with the lemon herb quinoa on the side.
