Quick and Easy Crunchy Roasted Chickpeas Snack Recipe

Ingredients:

  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • Optional toppings: grated Parmesan cheese, chopped fresh herbs, or a squeeze of fresh lemon juice

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Rinse and drain the chickpeas and pat dry with a paper towel.
  3. Spread the chickpeas out on a baking sheet lined with parchment paper.
  4. In a small bowl, whisk together the olive oil, smoked paprika, garlic powder, and salt. Pour the mixture over the chickpeas and toss until coated.
  5. Bake for 20-25 minutes, or until the chickpeas are crisp and golden brown.
  6. Remove from oven and let cool slightly before serving. Sprinkle with grated Parmesan cheese, chopped fresh herbs, or a squeeze of fresh lemon juice, if desired.

Notes:
