Lemon Pasta With Shrimp – Eat With Your Eyes

Ingredients: 1 pkt Angel Hair pasta, (9 ounce),1/4 cup cream,3 tablespoons fresh cilantro, chopped,1 garlic clove, chopped,1 juice of lemon,1 lemon, zest of,1/2 cup reduced-sodium chicken broth,1/4 cup Olive oil,1/2 cup Parmesan cheese, grated,3/4 teaspoon Salt,1 pound large fresh shrimp, peeled
Instructions:

  1. Cook pasta in a large pot of boiling water, according to package directions.
  2. Drain and return to cooking pot. Meanwhile, in a large skillet, over medium-high heat, heat the oil.
  3. Add the garlic and saute until soft, do not let brown!
  4. Add the lemon juice and broth and bring to a boil.
  5. Add shrimp, cook until shrimp are opaque, about 3 minutes. Reduce heat to low; add cream, cheese and lemon zest. Cook about 3 minutes to heat through, but do not boil. 2
  6. Serves
  7. Serves 4.
