Oreo Cheesecake Chocolate Covered Strawberry Bars – Eat With Your Eyes

Ingredients: 2 (8oz.) packages Cream Cheese, softened,2 eggs,1½ cups crushed Oreo cookies,¼ cup strawberry preserves,½ cup sugar,2 Tbsp unsalted butter, softened,1 tsp vanilla,3 oz. White chocolate (divided to 2 oz. and 1 oz.),Heat oven to 350.
Instructions:

  1. Take the Oreo cookie crumbs and butter and press into a 8 inch square pan that has been lined completely with parchment paper and sprayed with cooking spray.
  2. Place the pressed cookie crumbs into the oven and bake for 5 minutes.
  3. Remove and allow to cool as you work on the remaining steps. (Leave the oven on!)Melt 2 oz. of chocolate and set to the side.
  4. Mix cream cheese, sugar, and vanilla in a large bowl until blended well.
  5. Add melted chocolate and mix well.
  6. Add eggs, one at a time, mixing each well.
  7. Pour over the Oreo cookie crust.
  8. Bake in the oven for 25-30 minutes. Cool before spreading the strawberry preserves over the top. Melt remaining chocolate and drizzle over the cheesecake bars, then cool in the refrigerator for 4 hours before serving.
