Sheet Pan Sausage and Veggies with Spanish Rice

When I made the first iteration of this dish, I used pork sausage. I found that it got a little bit too fatty for my taste and didn’t go as well with the Spanish rice. I really felt as though it needed a milder sausage so that you could really taste the freshness of the veggies as well as the flavors of the rice. 

But you can sub in any kielbasa you like, I think the best part of this recipe is using already-made sausage and a box of rice. It’s things like this when they go from idea to actually working that make my job so fun. I mean, sure, I love recipe creation, but we have our busy days too, where a box of rice, a can of tomatoes, and some pre-cooked kielbasa paired with veggies both hits the spot and requires very little clean up. 

Plus, I went through a variety of cooking times for this one so I know I’ve hit the sweet spot when the rice comes out perfectly. When it’s not too crunchy, and not too mushy, then it’s time to hit “publish!”

WHAT INGREDIENTS ARE IN SHEET PAN SAUSAGE AND VEGGIES WITH SPANISH RICE?

This ingredients list may look long, but trust me, it’s still a cinch to pull together and you probably already have a lot of it on hand. 

  • Box of Spanish rice
  • Water
  • Can of crushed fire roasted tomatoes
  • Package of kielbasa turkey sausage
  • Olive oil
  • 3 bell peppers
  • Red onion
  • Salt and pepper
  • Garlic powder
  • Dijon mustard
  • Parsley or cilantro

HOW DO YOU MAKE  SHEET PAN SAUSAGE AND VEGGIES WITH SPANISH RICE?

Are you ready to make one of the easiest sheet pan dishes on this here blog? Roll up your sleeves, cuz here we go. 

First, preheat your oven to 425 degrees. Next, line half of a large, rimmed baking sheet with foil, folding the edges up on all sides to make a tray/divider for the other half of the pan (so the rice is contained). 

Next, in a bowl, stir together the rice, water, and tomatoes. Pour this into the tray half of your baking sheet. Bake this in the oven for 10 minutes. 

Toss together in a bowl the cut sausage, peppers, onions, olive oil, salt, pepper, garlic powder, and dijon mustard. Pour this mixture onto the other side of your baking sheet, arranging in as much of a single layer as you can. Put another piece of foil over the rice part of the dish, making a tent with the foil so that the rice can continue to steam once you put it back in the oven. 

Bake this all together for another 20 minutes, putting it under the broiler at the end for another 3-5 minutes, if you wish. Remove from oven, and fluff the rice with a fork, garnish with fresh parsley or cilantro and serve.

WHAT’S THE BEST WAY TO CLEAN A BAKING SHEET? 

It doesn’t bother me if my baking and cookie sheets get a little oxidized after many years of use. It’s actually kind of a cool backdrop for photos at times. But, about once every couple of years or so, I put all of my cookware through a good scrubbing. Not all at once, that’s crazy talk. I just mean, roughly every so often, I’ll scrub a pot, pan, or baking sheet down to (mostly) its natural state, which turns out to (I think) about every couple of years or so. Depends on how gross it gets. 

Anyway, that’s neither here nor there. But i’ll tell you how I like to clean them, and that’s with a mixture of good old baking soda and peroxide. Is there really no end to the good uses for baking soda? (And vinegar for that matter?)

  1. Set your baking sheet on a flat surface, or if you’re doing a cookie sheet (the one without edges) put it in your sink. 
  2. Sprinkle baking soda over the top of it, I do it a little heavier where there are more stains/stuff to scrub off. 
  3. Add vinegar to the baking soda and let it bubble up and sit for a good 3 hours or so. 
  4. From here, I’ll either take a scrub brush to the parts I know were really dirty, or just go ahead and rinse the mixture off and see what I’m left with, then scrub. Usually with this method I don’t have to do a whole lot of scrubbing though! 
  5. Wash again in dish soap and water, if desired.

for the rice

  • 1 6.9 ounce box/package Spanish rice
  • 1 1/2 cups water
  • 1 15-ounce can crushed fire roasted tomatoes

for the sausage and veggies

  • 1 16-ounce package kielbasa turkey sausage, thinly sliced diagonally
  • 2 tablespoons oil
  • 3 bell peppers, chopped any color
  • 1 small red onion, chopped
  • 1 teaspoon salt or to taste
  • 1/4 teaspoon pepper or to taste
  • 1 teaspoon garlic powder
  • 3 teaspoons dijon mustard
  • freshly chopped parsley or cilantro for serving optional
  • Preheat oven to 425 degrees. Line half of a large, rimmed sheet pan with foil and fold the edges up to make a tray and divider between the other half of the pan.

  • Stir together rice, water, and tomatoes. Pour into foil tray. Bake for 10 minutes while you prepare the veggies and sausage.

  • Toss together sausage, peppers, onions, olive oil, salt, pepper, garlic powder, and dijon mustard.

  • Arrange sausage and veggies on the unused half of the baking sheet. Place an piece of foil over the rice, do not press down, rather push the center up a bit and press the edges around the rim of the baking sheet to make a tent over the rice.

  • Bake for 20 minutes. Broil 3-5 minutes at the end, optional. Fluff rice with a fork, garnish everything with fresh parsley or cilantro if desired and serve.
