It’s grilling season and if you are looking for a simple and delicious grilled chicken recipe, you have to try this Soy Ginger Chicken. I guarantee it will be a summer staple and a favorite at every BBQ.

The chicken marinade is made with basic ingredients and is easy to whisk up. We like to let the chicken marinate for at least an hour to make sure the chicken has time to soak up lots of flavor. You can marinate it overnight, so this is a great meal prep recipe!

We like to use chicken thighs, but you can use chicken breasts or even drumsticks. The grilled chicken is juicy, tender, and has a sweet, salty, and slightly spicy flavor that you are going to LOVE!

Garnish with green onions and fresh cilantro to brighten up the dish! This easy ginger chicken makes a great weeknight meal or is perfect for entertaining.

Key Ingredients

  • Soy sauce– use lite soy sauce, it has less sodium. If you need the recipe to be gluten-free, make sure you use Tamari instead of soy sauce.
  • Brown sugar– to sweeten the marinade.
  • Oil– we use olive oil, but canola or vegetable oil will work too.
  • Ginger– make sure you use fresh ginger. I always keep ginger in the freezer, it stays fresh in the freezer for months. Use a microplane to grate it, you don’t need to thaw it first.
  • Lime– you will need the juice of 1 large lime.
  • Garlic– garlic pairs really well with ginger and soy!
  • Siracha– for a little kick, I promise it isn’t too spicy.
  • Chicken– we like to use chicken thighs because they are juicier and have more flavor than chicken breasts. If you prefer chicken breasts, you can use them. You can even use drumsticks.
  • Green Onions and Cilantro– for garnish and a little extra flavor!

How to Make Ginger Chicken

  • First, make the marinade. In a medium bowl, whisk together the soy sauce, brown sugar, oil, ginger, lime juice, garlic, and Siracha.
  • Pour the marinade in a reusable freezer bag with the chicken. Press out the air and seal shut. Place the bag in a bowl and refrigerate for at least 1 hour or overnight.
  • Preheat the grill to high heat. Carefully brush the grill grates with oil to prevent the chicken from sticking. Place the chicken on the hot grill and discard the marinade. Cook for 5 to 7 minutes per side, until browned and cooked through, the internal temperature should be 165 degrees Fahrenheit.
  • Transfer the chicken to a platter and garnish with sliced green onions and cilantro. Serve warm.
  • If you don’t have an outdoor grill, you can make the chicken on the stovetop, just use a grill pan!

  • 1 teaspoon Siracha, or more if you want it spicy
  • 2 1/2 pounds boneless chicken thighs, can use chicken breasts or drumsticks
  • Salt and pepper, to taste
  • Sliced green onions and chopped cilantro, for garnish
