Vegan Valentine’s Day menu
Starter: creamy soup
Let celeriac shine in this extra-special soup recipe, made velvety by blitzing caramelised celeriac with potato, fresh herbs and soya cream. Earthy truffle oil adds a splash of sophistication, and the toasted hazelnuts on top give this celeriac, hazelnut and truffle soup a fancy feel.
If you’ve got the time, it would be perfect with a spongy square of homemade focaccia, decorated with flaky sea salt and rosemary.
Main course: romantic tarte tatin
What could be more fitting for Valentine’s Day than a rosy-red beetroot & red onion tarte tatin? It looks the business, but if you use shop-bought puff pastry (which we’d advise) it’s actually pretty simple to make. Remember to top with orange zest for a final flourish and serve with a peppery green salad – and maybe a side of lemon, garlic & bay roast potatoes, cooked in rapeseed oil.
Dessert: fruity sorbet
Impress your loved one with a scoop of sweet mango sorbet, made from scratch. You only need three ingredients (ripe mangoes, sugar and one lime) and a freezer – no need for an ice cream maker. Because this recipe needs a few hours to freeze, start making it on Valentine’s Day morning.
And for afters: chocolate drops
For a final, romantic touch (and if you have the time), score some serious brownie points with a tray of homemade vegan truffles. They’re easy to make – just pour a warm oat milk, sugar and vanilla mix over dairy-free dark chocolate, cover and chill, then roll into balls and coat in cocoa powder. Simple!
Cocktail: fancy gimlet
Elegant and refined, a gimlet cocktail is made by mixing super-cold lime syrup (it’s easy to make your own using fresh limes and caster sugar) with gin and plenty of ice. Decorate with pretty edible flowers and a slice of lime.
